Named for the process, not just the flavor. After picking, the cherries are pulped but the sticky, honey-like fruit layer is left on the bean to dry in the sun for days, turning a deep red as it ferments slowly in the heat. That patience is where the stone fruit and honey sweetness come from. It's a slower, riskier way to process coffee, but it's the only way to get this particular kind of sweetness.
Red honey process takes days of sun and patience most farms skip. You can taste the difference in every cup.
